
This makes one individual serving and is around 200 calories. It's a quick, refreshing hot lunch.
Mimsy's Swiss Chard with Black Beans & Egg
3 large Swiss chard leaves, diced
2 slices of onion, diced
1/4 red bell pepper, diced
1 1/2 tsp olive oil, divided
Salt & Pepper, to taste
1/2 cup black beans, cooked
1 egg
Saute chard, onion and pepper in 1 tsp olive oil until tender. Add beans and heat through. Transfer to plate, add 1/2 tsp olive oil to pan and cook egg until soft-done. Top veggies with egg. Eat!

This looks so good an easy that I might just make it. I might just make it tonight.
I just want to tell you that I made this tonight with spinach (because I couldn't fine any swiss chard) and it was delicious and my cooking teacher thought so too, and said it was the best thing of the four recipes we made. Yum, Thank you!!
